I’m Jen. I’m 26 and I live in Toronto, Canada with my boyfriend, 2 fat cats, and a messed up thyroid.
I originally wanted to start a food blog as an effort to a) force me to be less lazy and cook more, and b) force me to be less lazy and practice my food photography. But over the last few weeks, I’ve been doing a lot of reading about thyroid disease. I have Hashimoto’s thyroiditis , and I’m stuck in an annoying limbo with my doctor. In short, my blood tests are fine, but I still feel like crap. Last week, I went on Amazon and searched “thyroid”. The first book that popped up was called “Why Do I Still Have Thyroid Symptoms? When My Lab Tests Are Normal“. Suddenly I realized there was a huge world of information out there that might actually be able to help me.
“Gluten-free” is something I’ve been hearing and reading for weeks. (See: The gluten-thyroid connection.) So, I’ve decided to try a gluten-free diet. Why not, right? I’ve got nothing to lose and everything to gain.
So, this blog is about my wacky journey into gluten-free eating, recovery (hopefully), and all other health and fitness and food related stuff (accompanied by pretty pictures).
